Chicken and Veggie Enchilada Bowl

Need a quick and easy dinner to make tonight?

Got a few chicken breasts in the freezer?

Well let’s make this super simple Enchilada Bowl. Another instant pot recipe.

I was so excited to dig into this at lunch today. Such a simple, delicious and healthy recipe full of veggies.

Plus, I’ll tell you my trick to making this 1 pot dish into 2 meals so my picky eaters are happy too.

𝑰𝒏𝒔𝒕𝒂𝒏𝒕 𝑷𝒐𝒕 𝑬𝒏𝒄𝒉𝒊𝒍𝒂𝒅𝒂 𝑩𝒐𝒘𝒍𝒔

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬

1 lb boneless, skinless chicken breasts

1 jar red enchilada sauce

1 bag cauliflower rice

1 bell pepper, chopped (I used orange cause that’s what I had on hand)

1 small onion, chopped

1 medium zucchini, diced

1 cup canned black beans, drained & rinsed

Avocado, cheese, black olives, hot sauce, sour cream and/or cilantro for optional toppings (I love #tofuttisourcream as a #dairyfree alternative).

𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬

1) Place chicken breasts and enchilada sauce in an instant pot; toss to coat evenly.

2) Cover and seal the pot. Cook on poultry or pressure cooker setting on high for 15 minutes. Release the pressure to vent immediately, being careful to avoid escaping steam.

3) Carefully open the lid and remove the chicken. Leave the sauce in the pot.

4) Using two forks, shred the chicken and set it aside. It does not go into the pot until the very end now. This is also where I set some chicken aside for the kids- my son doesn’t mind spice, so I will drizzle some of the enchilada sauce over his & he’ll make his into a burrito. My daughter is super picky, so I’ll put some shredded chicken (no extra sauce) with piles of chips, cheese & lettuce for her to build her own taco bites.

5). Now back to what I’m obsessed with....these bowls. Add cauliflower rice, vegetables, and beans to the pot. Stir to coat with sauce, cover and seal the pot. Cook on pressure cooker setting on high for 3 minutes.

Release the pressure to vent immediately, being careful to avoid escaping steam.

6) Carefully open the lid and return the chicken to pot. Stir to combine.

7) Divide the enchilada mixture evenly among 2 bowls. Top with whatever you prefer.
