My son is obsessed with chipotle and his favorite is the carnitas.

So I’ve been determined to find a delicious & easy recipe at home. This was a winner!! Plus with it being a crockpot recipe, it’s perfect for a quick weeknight meal.

We created a taco/burrito bowl buffet of ingredients and toppings to make everybody happy. Jasmine rice, black beans, lettuce, fajita veggies, pico de gallo, guacamole, cheese, and sour cream. Plus regular ground beef taco meat, chips & tortillas to make my picky eater happy.

Crockpot Carnitas

Ingredients

  • 2 T olive oil

  • 2 cloves of garlic, minced

  • 1 tsp ground cumin

  • 1 tsp dried oregano

  • 1 tsp adobo seasoning (optional)

  • salt & pepper

  • 1 lb pork tenderloin

  • 1/2 onion, sliced

  • juice of 1 medium orange or 1/3 cup orange juice

Instructions

  1. min a small bowl mix together spices & olive oil. Rub evenly over the pork. (I did this step in the crockpot so anything that didn’t stick fell into the crockpot itself).

  2. add onion and orange juice over top of pork.

  3. cook on low for 5 hours

  4. shred with two forks & serve immediately
