White Bean Chicken Chili
When you’re yearning to savor something bright and refreshing, but still need something to warm your bones, this Chicken and White Bean Chili is your answer. It’s the best of both worlds!!
Plus, it’s instant pot or crockpot friendly.

White Bean Chicken Chili
Ingredients
2 medium onions, chopped
1 medium red or yellow bell pepper, chopped
1 lb raw chicken breast, boneless, skinless
4 cloves garlic, chopped
4 cups low-sodium organic chicken broth
2 15-oz. cans cannellini beans, drained, rinsed
1½ tsp. ground cumin
1 tsp. chili powder
½ tsp. sea salt (or Himalayan salt)
½ tsp. ground black pepper
1 4-oz. can roasted green chiles
cilantro, coarsely chopped (for garnish; optional)
Other toppings: crushed tortilla chips, cheese, sour cream or Greek yogurt, avocado, etc
Instructions
Place onions & pepper in the bottom of the instant pot of crockpot.
Add chicken breasts on top.
Add garlic, broth, beans, cumin, chili powder, salt, pepper, and chiles.
In Instant Pot: cook on stew/chili setting for 30 min.
In Crockpot: cook on high for 4-6 hours, low for 8 hours.
Shred the chicken & add back to the rest of the chili. Stir.
Divide chili into six serving bowls; garnish with desired toppings.
