This soup is basically Fall in a bowl and so simple to put together.

Instant Pot Butternut Squash Soup

๐‘ฐ๐’๐’ˆ๐’“๐’†๐’…๐’Š๐’†๐’๐’•๐’”

โ€ข 8 cups of cubed butternut squash 

โ€ข 1 T olive oil 

โ€ข 1 medium onion, chopped 

โ€ข 2 cloves garlic, minced 

โ€ข 1 green apple, chopped

โ€ข 1 carrot, chopped

โ€ข 4 cups veggie stock 

โ€ข 1/4 tsp smoked paprika 

โ€ข 1/2 tsp ground ginger 

โ€ข 1/2 tsp tumeric 

โ€ข 1 cup lite coconut milk 

โ€ข salt & pepper to taste

1. Sautรฉ onion & garlic in olive oil. 

2. Add squash, carrot, apple, stock and seasonings.  Stir until well combined.

3. Set instant pot on high for 30 min (use instructions on your instant pot for pressure release, etc). 

4.  Blend until smooth using immersion blender.

5. Add coconut milk, stir and serve.
