Butternut Squash Soup
This soup is basically Fall in a bowl and so simple to put together.

Instant Pot Butternut Squash Soup

โข 8 cups of cubed butternut squash
โข 1 T olive oil
โข 1 medium onion, chopped
โข 2 cloves garlic, minced
โข 1 green apple, chopped
โข 1 carrot, chopped
โข 4 cups veggie stock
โข 1/4 tsp smoked paprika
โข 1/2 tsp ground ginger
โข 1/2 tsp tumeric
โข 1 cup lite coconut milk
โข salt & pepper to taste

1. Sautรฉ onion & garlic in olive oil.
2. Add squash, carrot, apple, stock and seasonings. Stir until well combined.
3. Set instant pot on high for 30 min (use instructions on your instant pot for pressure release, etc).
4. Blend until smooth using immersion blender.
5. Add coconut milk, stir and serve.
