Quick Summer Salad
I love a crunchy & refreshing salad during the warm summer months and this one does not disappoint. It’s simple, fresh, and delicious!

Ingredients
2 red bell peppers, sliced
2 cucumbers, cut length wise & then into half moons
1 pkg grape tomatoes, sliced in half
1/2 medium red onion, sliced
1/2 cup assorted Greek olives, sliced
1/3 - 1/2 cup feta cheese (optional and not pictured)
1/4 cup olive oil
1/4 cup red wine vinegar
salt & pepper to taste
2 T each fresh mint and parsley, finely chopped
Instructions
In a large bowl, whisk together the ingredients for the dressing - the oil, vinegar, fresh herbs, salt, and pepper.
Add the vegetables, olives, and feta (if desired) and combine.
This salad can be enjoyed immediately or stays well in the fridge for up to 3-4 days. It’s a perfect make-ahead side dish for meal prep or a great mayonnaise free picnic side dish. Enjoy!!
